Apple Pie

Apple Pie

There is a lot to be grateful this Thanksgiving.  All my boys are going to be here at our home in Altavista Va.  I’m cooking the turkey & ham and all the fixings.

Baked an apple for the first time for Thanksgiving this year.  I am not sure the apple filling was suppose to spill over the edges like that.  Good thing I put a cookie sheet under the pie pan while it was in the oven.  I am not particularly fond of apple pie however my husband is.  Consequently I baked it for him.  This meant that I had to search for an apple pie recipe that did not require sugar.  He has to watch his sugar intake.

Staunton River Library lit up at night.

Love living close to the library.  Love books.  Love reading and learning.  Can’t you just get lost in a book?

Reminds me of when I was younger, in grade school.  There was a summer contest at the local library.  I read over 100 books over the summer.  I remember writing all the titles down & keeping track.  Reading is definitely one of my favorite memories of my childhood.

I read now as often as I can and as much as I can.  I carry books with me just in case I have a spare moment to squeeze in a few paragraphs.

In 2010 I need to make time to spend more time at the Staunton River Library in Altavista Va
